GELATIN

What is gelatin?

The gelatin is an animal protein derived from the partial hydrolysis of collagen, which is the main constituent of animal skins, obtained from raw material such as rawhide or skin trimmings.
In the market it can be found as a fine powder, slightly yellowish, without flavor and with a characteristic odor.
With Pilsac 300º bloom you will save up to 30% * of Gelatin in each one of your recipes.
Same dessert with less gelatin!
*The saving amount may vary depending on the gelatin bloom which you compare it to: 10% saving with 275º, 20% saving with 250º, 30% saving with 225º, etc.
What is bloom and why is it important to my recipes?
Bloom is the force that gives the gel a prepared gelatin, in other words: is how long your gelatin will resist at room temperature without melting.

INSTRUCTIONS:
Each recipe has different requirements, please follow the steps of your recipe to know quantities and steps to use the gelatin in it.
RECOMMENDATIONS:
- If your recipe requires to hydrate the gelatin, make sure to pour it into the liquid where you will hydrate it to avoid lumps.
- For best results, be sure to always use boiled, filtered and/or pasteurized milk; also work with clean utensils and hands.
- Once the package is opened, make sure to close it tightly and store it in a cool and dry place.
