Gelatin Production Process

Since we're dealing with a byproduct derived prom calf skin, an alkaline process is used in which the hide enters a chemical treatment that allows to soften and break the reticulations at the tissue level.

The production process has the following stages:

Extraction

The hides are washed then they go through the continuous extractors where it is put in direct contact with water at controlled temperatures so a liquor with a stable concentration is obtained. In order to get this, it is very important to have a close control on the amount of water, its temperature and the quality of the hides.

Filtration

There are several filtration phases in order to obtain an impurity free liquor and with the best quality specifications in the market. The last filtration phase is carried out on plaques to get an excellent finish on the product; the plaques of these filters have such a small pore so that they permit a bacteria free product.

Ultra filtration

An important part of the production process where a concentration of the liquor is carried out and mineral salts such as calcium, sodium, potassium and magnesium are taken away so that the product can achieve a good jellification.

Sterilization

In this stage the liquor is taken to temperatures of around 120°C - 140°C for a period of 6-8 seconds in order to eliminate the possibility of survival of any pathogen microorganisms.

Drying

The gelatin is dried by a continuous band drying equipment with filtered air.

Crushing, Classification and Mixing

Taking into account the specific requirements and applications of clients, Pilsac gelatin is crushed, mixed and classified so that it can be stored in bags but not before first doing a final laboratory analysis to assure the desired quality specifications of the product that will be delivered.
